Here is a super simple mac n’ cheese recipe for you!

I used quinoa noodles, but you could use some other type of noodles if you are so inclined.

Ingredients needed:
1 1/2 cups of quinoa noodles
3 cloves of garlic
3-4 slices of bacon
1 cup almond milk (or milk of choice)
2 Tbsp butter
salt and pepper
1 1/2 to 2 cups shredded cheese of choice – I like a variety of cheddar and something else.ย  I made this version with cheddar and havarti.
2 Tbsp tapioca flour

  1. Preheat oven to 300 degrees.
  2. Bring a pot of water to a boil; add the pasta to cook with a few pinches of salt.
  3. While the pasta cooks, brown 3-4 strips of bacon (or you can do this at another time and have it ready to go).
  4. Also while the pasta cooks, melt the butter in a skillet or pot large enough to hold the pasta when it’s finished.
  5. Add the tapioca flour and stir over medium heat until the mixture is lightly browned, about 1-2 minutes.
  6. Add the almond milk and whisk to remove any lumps; add the salt and pepper.
  7. Cook over medium heat until the sauce thickens and starts to bubble. About 5 minutes.
  8. Stir in the cheese and whisk until smooth and melted. Turn off the heat.
  9. When the pasta is almost finished, drain it and add to the sauce mixture.
  10. Stir the pasta into the sauce, top with bacon, and bake in a greased pan for 20-25 minutes or until browned and bubbly. You can also skip baking it if you want it creamier and just put it under the broiler to brown the top. Serve immediately and enjoy!
